The Klean Kitchen is a series of healthy cooking classes designed to provide students with hands on instruction on how to prepare healthy, “clean”, and of course delicious food at home. They stress the importance of selecting ingredients that are free of GMOs and harmful toxins such as pesticides, preservatives, antibiotics, and hormones. My recipes are nutrient dense and mindfully crafted with love to bridge wellness and gastronomy!

This month’s class will be held Wednesday, February 25th at Fairweather Natural Foods (1270 Ironhorse Dr., Park City, UT 84060) and features dishes that your kids will love but are also nutritious, supporting growth and brain development. Kids are picky eaters. Learn great, healthy recipes and tips to “sneak” healthy food into their meals.

Classes are $60/person and include instruction along with recipes to take home. Once students have prepared the food they sit down to a family style meal to enjoy the delicious & nutritious recipes they’ve created as a team.

Gluten Free "Fried" Chicken with Hemp Hearts

Recipe type: Gluten Free

Cook time: 45 mins

Total time: 1 hour

Serves: 8 servings

This is a great dish for the entire family but kids especially love it. It's like a healthy, gluten free version of chicken fingers and has omega 3 rich hemp hearts!

Ingredients

  • 4 breasts 4 thighs organic chicken

  • 2.5 cups organic corn flakes

  • 1 cup hemp hearts

  • ½ cup almond flour

  • 2 Tbsp. sesame seeds

  • ¾ tsp. cayenne

  • ½ tsp. garlic powder

  • 1 tsp. salt

  • 2 egg whites

  • 1 cup plain organic yoghurt

  • 1 Tbsp. Dijon mustard

Instructions

  1. Preheat the oven to °375 F.

  2. Place cornflakes in a food processor and process into a fine crumb. In a large mixing bowl combine cornflake crumbs, almond flour, hemp hearts, sesame seeds, cayenne, garlic powder, and salt.

  3. In a separate mixing bowl combine egg whites, yoghurt, and mustard. Beat ingredients together. Place chicken in egg/yoghurt mixture and coat well. Spray a parchment lined baking sheet with coconut oil or olive oil. Dredge the chicken in the dry ingredients to completely cover with the crumb mixture. Place chicken on baking sheet and spray liberally with oil. Bake for 40-45 minutes or until golden brown.

Notes

*Hemp hearts are high in Omega 3 essential fatty acids and an excellent ingredient in crusts for chicken, fish, or eggplant.

*Always select organic chicken. Factory farmed chickens have harmful hormones, antibiotics, and super high levels of cortisol due to crowding and lack of sunlight.
